Last week I ordered both of Gwyneth Paltrow's cookbooks My Father's Daughter and It's All Good. I was afraid they would contain amazing sounding dishes that take 25 ingredients and 2 hours to make therefore finding their way to the "Land of Forgotten Cookbooks" but I've been pleasantly surprised with the simplicity of many of the recipes and ingredients.
The other night I made Salmon with Sriracha + Lime. It was so easy and so delicious I felt the need to share. Try it this weekend if you are a Salmon lover!

Salmon with Sriracha + Lime
Serves 4
Zest of 1/2 lime
1 1/2 TBS freshly squeezed lime juice
1 1/2 tsp Sriracha Sauce
1 TBS good-quality maple syrup
1 1/4 pound salmon fillet with skin removed
2 TBS roughly chopped cilantro
Preheat oven to 425
Whisk together the lime zest, lime juice, Sriracha sauce and maple syrup along with a pinch of salt. Line a baking dish with parchment paper, place the salmon on top, and pour the mixture over it. Roast until the salmon is done to your liking - I like it when it's just cooked through and begins to flake, about 15 minutes, depending on the thickness. Serve and sprinkle with cilantro.
I served this with brown rice, steamed veggies and a kale salad. Everyone loved it!! I highly recommend both books.
